Harvest

Late-harvested in small batches between end of September and beginning of October. The fruit is than laid on wooden crates, that are kept in our greenhouse, for additional months of drying process.

Winemaking process

After a soft press, it is fermented in French barriques of new cooperage for a period that goes from 12 to 15 months. Following a micro-filtration, it is bottled, and it rests for at least 1 year before release.

Tasting notes

Deep golden yellow with amber highlights. Rich and intense nose, with hints of honey, apricot, almond and dried fruit. Broad and expansive palate, intense and persistent on the finish. The sweetness is well balanced by acidity and mineral notes.
