Grape variety
100% Albana from a vineyard planted in January 1994 at a density of 7.000 vines per hectare (2,800 plants per acre) all trained in “Alberello”, “Bush” system.
Soil
Calcareous-clayey mixture. Exposure south-west. Altitude 350 m.
Harvest
The fruit for our Chimera is harvested in extremely small batches, because of the presence of botrytis on the clusters, which is the characteristic of this particular wine; therefore the harvest takes place in several phases allowing the botrytis or “noble rot” to optimally develop on the berries.
Winemaking process
After a soft press, it is fermented and matured in new French barriques for a period that goes from 12 to 24 months, depending on the vintage. Following a micro-filtration, it is bottled, and it rests for at least 1 year before release.
Tasting notes
Golden yellow colour with copper highlights. Honey, dried fruit, raisins and dried fig notes develop with rare elegance and accuracy. Full-bodied palate, where extensive sweetness is nicely offset by a full-flavoured background.
A fresh-mineral note prevails on the finish. Serving temperature: 12°C.
